Treacle Tart

WEIGHT INGREDIENTS
184g Butter (cubed)
6 Eggs
140ml Double Cream
4 TSP Salt
1440g Golden Syrup
330g Brown Bread Crumbs

METHOD
Melt butter in a pan until it starts to foam and go brown, Remove and strain through a fine sieve. Mix eggs, cream and salt in a bowl. Heat golden syrup on a low heat, when hot remove from heat and add brown butter, stirring to incorporate it, it will become cloudy when done. (Needs to be done while they are still hot because it stops the other ingredients from separating). Stir in the cream, then add the bread crumbs make sure they’re mix in well. Pour mixture into tart case and cook @ 160°C for 25 mins then turn down oven and cook for a further 20 mins @ 140°C. When cooked firm to touch.
